FEBRUARY GOALS -- WHAT I ACTUALLY ACCOMPLISHED


ACCOMPLISHED
+ I went to the dermatologist {first time ever -- not sure why I waiting so long!}
+ I did really, really good not making online purchases this month.  Not perfect, but the few times I cheated were on true necessities, not wants.
+ I didn't get my nails done at the salon, but I did put these press-ons on -- $5!!
+ We spent a night with our friends, the Joynts.  It was super fun to kick their butts in Monopoly catch up!  We also had dinner with the Sieferts and spent an afternoon on a party bus with lake friends.  Plus burger nights.
+ We took the kids skiing & we're headed back to the slopes today!

DIDN'T ACCOMPLISH
+ Painting of the kitchen cabinets -- again, sigh.  We did add a shelf in the kitchen, paint the AV room, & order wall paper for the elevator.  I'm hopeful that tomorrow we will get the new shelving installed in the AV closet and hang a bunch of stuff in the garage.  ::fingers crossed::
+ The dang photo books!  BUT -- I did start one out 2019 book, so it's progress I guess.  Maybe by 2021 I can be caught up! ;)

Our Weekend in Minnesota | The Ice Castles

This is less a 'What to do when in Minnesota' post and more of a 'here are our photos from the Ice Castle' because I was having major issues with my phone and therefore have no photos!  

Friday Adam and I surprised the kids by pulling them out of school at noon and heading for Minnesota.  We headed straight to the Ice Castle in New Brighton.  If you remember, they used to be in Stillwater -- one of my favorite weekend getaways with my family!  Look at my babies in 2017!

Noteworthy, on the way there my phone wouldn't charge with the car charger.  I flipped it to airplane mode so save enough battery for the Ice Castles.  It's super hard do explain/imagine if you haven't been there, but trust me when I say it's a really neat experience.  They kids had a blast just running around having us follow them in and out of little cave tunnels {technical term there!}  This year, we got tickets for late afternoon/early evening so we could see them light up.  Last time we went, it was during the day so we didn't get to experience that.  They also had a flame thrower show that the kids loved.  The highlight is always the slide!  They have two smaller slides for kids until 42 inches tall and to bigger slides for anyone over 42".  It's a great time -- for all! ;)  





































After the Ice Castles we checked into our hotel.  We didn't stay in Minneapolis this weekend because we wanted to be close to our friends who live in Woodbury, so we stayed at the Courtyard by Marriott St. Paul/Woodbury.  It wasn't fancy by any means, but the rooms were cute and the pool was warm {a must for this mama!}  

I have to photos from dinners/lunches for the weekend because my phone wouldn't charge all weekend, apparently it will only charge with a wireless charger {which is all I use at home, so I had no idea} but it's okay because we hung out with our friends and their three kids all weekend and it was just fun to be super present. 

My only real recommendations if you haven't been to Minneapolis yet would be to make sure you get a Juicy Lucy from the 5-8 Club or The Nook.

Ate that:

Air Fryer Chicken Parm
Ingredients
  • about a cup of Panko
    2 eggs
    about ¼ cup grated Parmesan cheese4 boneless, skinless chicken tenderloins, not frozen
Instructions
  1. Spray the basket of your air fryer.
  2. In a bowl, stir together your breadcrumbs and grated Parm.  In another bowl, mix 2 eggs.Take each chicken tenderloin and dunk in eggs and then dredge each piece in the breadcrumb mixture and place it in your air fryer.
  3. Close the air fryer, set the temp to 325 degrees and the timer to 19 minutes.
  4. When the timer goes off, your chicken is ready to go!

Daddy Daughter Dance

Earlier this month, Adam took Jordyn to her first Daddy Daughter Dance.  She counted this day down from 40, so was so excited!  Confusing the DDD with her weekly Dance class, she asked me a couple of times how did was going to learn the routine! ;)  The day of, Cullyn and I picked up some jewelry a flower and some new shoes to surprise her with after school.  I did her hair and painted her nails and Adam got home just in time to pick her up for dinner with friends before the dance.  

















I got a couple of video & photo updates through the night and I'm confident she had the time of her life!  That was also the night of her very first successful sleepover at a friend's house.  Although I'm not surprised, because she just loves Tyri!  :)
